Drip acclimation is basically when you are getting your fish used to the new water conditions it is to be housed in over a period of time.

It's done in a way similar to gravel vacuuming - you're creating a siphon essentially.

By tying a knot in middle of the tube, you're making sure that the flow of water being transfered from the tank is "dripping" (thus drip acclimation) as opposed to freely flowing.
Letting a steady drip into the container with your new fish happen over a period of time, your fish slowly gets acclimated to its new conditions.

Although, if thats not exactly clear - its a lot easier to show than to explain for me.
