They use a mineral called Zeolite. Zeolite adsorbs ammonia on contact and can quickly eliminate it from a tank. This is fine for emergencies, but otherwise not a very good idea, as BV77 said. Once the zeolite loses it's effectiveness, you'll suddenly have a bunch of ammonia in the tank and no bacteria to deal with it.
